A new food system
for Ireland.
And eventually the world.
Regenerative farms in every county. A permanent foundation to protect the mission. A community of 1,000 Founders helping to build it from the beginning.
The current food system
is not working.
Health is failing.
Ireland has some of the highest rates of chronic illness in Europe. Ultra-processed food dominates supermarket shelves. Most people cannot name where their food was grown, who grew it, or how.
Land is under pressure.
Farm consolidation is shrinking the farming community. Soil degradation is accelerating. The people who know how to work the land are ageing out with no system to replace their knowledge or their role.
Communities have no stake.
Food value leaves the county the moment it is grown. Supermarkets, processors, and distributors take the margin. Local communities bear the environmental cost but receive none of the economic return.
Six layers. One system.
EatoSystem is not a single product. It is six interconnected layers — each essential, each designed to work with the others — forming a complete food system from the ground up.
EatoSystem began with a question.
What if a community's food knowledge — its farmers, its recipes, its seasonal rhythms, its land memory — could be collected, protected, and made useful in a way that actually fed the community that created it?
That question became a national AI agent, built in 24 hours on February 15, 2026. Not because the technology was the point — but because it was the fastest way to start a real conversation with real people across all 32 counties of Ireland about what they wanted from their food system.
Those conversations revealed something important: the hunger for a genuine alternative was everywhere. In every county. Among farmers, parents, chefs, community organisers, investors, and people who simply wanted to know where their food came from and trust what they were eating.
EatoSystem has since grown into something much larger. It is now a full food system infrastructure — EatoFarm, EatoFoundation, EatoFund, EatoVerse, EatoAI, EatoIndex — being built county by county, with 1,000 founding people helping to shape it from the beginning.
We are in Phase 1. The EatoFoundation is being constituted. The first 1,000 Founders are being selected. The first EatoFarm sites are being identified. The build is live, in public, and open to the people who want to be part of it.
Six values.
Written into everything.
These are not aspirations on a wall. They are the criteria by which every decision in the EatoSystem is made.
Health First
The health of people is the primary measure.
Every decision in the EatoSystem is judged first by whether it improves nutritional quality, food access, and community health. Not yield. Not profit. Health.
Land as Legacy
Every EatoFarm improves the land over time.
Regenerative by design. The farms don't just produce — they build soil carbon, restore biodiversity, and leave the land in better condition than they found it.
Local Ownership
Revenue, governance, and decisions stay local.
The county is the unit of change. Food value, economic returns, and decision-making power stay as close to the community that produces the food as possible.
Permanent Mission
The mission cannot be sold or redirected.
The EatoFoundation holds the mission in perpetual trust. No acquisition, board change, or commercial pressure can alter what the EatoSystem was built to do.
Built for Everyone
Not a niche product. A new infrastructure.
Designed to work for families, farmers, communities, and enterprises equally. The EatoSystem is not a premium product for the few — it is a food system for all.
Ireland Proves It
32 counties as a living laboratory.
If the model works across all 32 counties of Ireland — every landscape, every community, every challenge — it can be replicated anywhere in the world.
Jason Curry.
Founder · EatoSystem
Jason Curry is the founder of EatoSystem — a food system designer, not a food scientist or a technologist. His background is in understanding how communities work, how value flows, and how the gap between what people want from their food and what the current system delivers keeps getting wider.
EatoSystem is his attempt to close that gap — not through a product or a campaign, but through building the actual infrastructure a genuinely good food system requires: the farms, the governance, the capital, the community, the intelligence, and the data standard.
He reads every message personally. If you have something to say about what's being built — a question, a challenge, an idea, or an introduction — he wants to hear it.
