Why Ireland?
Ireland has all the conditions to build the world's best local food system. Rainfall. Grass growth. Farming culture. 32 distinct counties, each with its own ecology, its own produce, its own community identity.
Ireland also has a food system that has failed to capitalise on those conditions. Imported food dominates. Farmers are squeezed by global commodity markets. Communities have lost connection to where their food comes from. The land carries the cost of industrial practices.
EatoSystem is the attempt to fix that -- one county at a time, with real people, real data, and real AI working together.
Jason Curry, the founder of EatoSystem, started with a question: what if we could use AI not to replace human knowledge but to collect it, organise it, and feed it back to the communities that need it? What if every county in Ireland had an advisor that knew exactly what was growing, who was growing it, and how to connect food producers with the people who wanted to eat it?
The Ireland national agent launched on February 15, 2026 -- built in 24 hours, deployed the same day. Not perfect. Not finished. But live, talking to real people, and learning with every conversation.
Jason Curry
Jason Curry is building EatoSystem from the ground up -- founder, developer, designer, and first community organiser. The vision is simple: Ireland has the land, the farming culture, and the people to build the best food system in the world. It just needs the architecture to connect them.
Throughout this project, Jason is personally collaborating with farmers, investors, researchers, food producers, community leaders, and global thinkers who want to help shape what Ireland builds. Not formal roles. Real conversations -- one on one or in small groups -- about what should be grown, what the system needs, and what Ireland can become.

Revenue flows back to the communities that produced the food. Farmers, growers, and local processors benefit from the system they contribute to.
